The invention relates to a method for processing fish of the Trachurus species and an apparatus for performing the method. In order to obtain top quality products of this fish type and which a high yield, there is provided a tool for removing the bony structure at the end of the abdominal cavity which is prejudicial to precise processing. The tool comprises two circular knives acting as abdomen openers and in whose gap where is arranged a guide member with a sharp leading edge and covering the upper rear area of the cutting edges, which guide member removes the fin ray support (pterygophore) of the anal fin overlappingly connected to the first belly spoke (haemapophyses of the eleventh vertebra) together with the anal fin and the abdomen edge, so that no bearing or rearing up of the tail area impeding the separation of the lateral keeled scales, in particular, occurs.

The invention relates to the fishing industry, namely, to a device for cutting fish from the family of mackerel on a fillet, whether it is decapitated, gutted, with an open abdominal cavity and distant platinum-like fish scales.
During the mechanical processing of fish, the main goal is to achieve as high a heat output as possible using the raw materials with the maximum economic effect. For this, it is necessary, with the most economical management of the cut, to ensure the possibility of obtaining in each case a product free from impairments of its quality. Such inclusions in fish of the mackerel family are lamellar scales located on the sides of the tail of the fish’s body, which make it difficult to get both fillets and other products. For this reason, it is necessary to remove these plate scales and make it possible to allow the process to proceed unhindered. However, the removal of scales is associated with known difficulties, since the spindle-shaped tail part of the fish must be moved with such processing very precisely so that perfect quality and economical separation can be carried out.
The desired result can be achieved with great reliability only if the body of the fish moves during this technological operation if there is a support in the abdominal cavity under the lower part of the spine. The prerequisite for this is, first of all, the opening of the abdominal gulness. At the same time, however, it appears that the mackerel family of fish at the end of the abdominal cavity at the anus has a solid structure in the form of the base of the rays of the anal fin, which causes the treated tail section of the fish to be pushed upward so that the treatment of this area at least, with the achievement of the desired quality, it becomes impossible.
A device is known for cutting fish of the mackerel family on fillets or decapitated, gutted with an open abdominal cavity and removed plastinch with 1 scale fish, which contains a conveyor for moving decapitated fish with a head section forward, a guide with a supporting surface, two circular knives for opening the abdominal polish symmetrically located relative to the guide with the formation of a gap between them, and filleting knives.
However, in the known device, when processing the final part of the abdominal cavity of fish of the mackerel family, fish meat loss is possible.
The aim of the invention is to improve the quality and increase the fish meat yield.
The object of the invention is to create a device with which the end portion of the abdominal cavity in fish can be processed without loss. mackerel families, so that when they are moved in the swimming position, it is possible for them to accurately pass over the guiding elements that enter the abdominal cavity.
For this purpose, a device for cutting fish of the mackerel family on fillets or decapitated, gutted with an open abdominal cavity and removed lamellar scales contains a conveyor for moving the decapitated fish head section forward, guiding with a supporting surface, two circular knives for opening the abdominal cavity symmetrically arranged relative to the guide with the formation of a gap between them, and filleting knives, provided with a fixed, placed in the gap between the disk knives, behind the zone of the working part of the blades a guide element having a beveled front part and an adjacent rear side to the guide element, wherein the front edge of the guide element is located directly in the zone of the highest point of the disc knife, is pointed and directed towards the direction of movement of the fish.
It is advisable to place the upper edge of the guide element above the top point of the disk knife. The upper edge of the guide element should be made with a notch.
Fig. 1 schematically shows the proposed device for cutting fish of the mackerel family into fillets or beheaded, gutted with an open abdominal cavity and removed lamellar scale fish, perspective view; 2 is the same side projection; on fig.Z - working body, cross section; figure 4 - the skeleton of the fish of the mackerel family.

which is a working body for opening the abdominal cavity of the fish, containing two circular knives 2 fixed on the same axis 3. The circular knives 2 are provided with a drive for clockwise rotation in vertical planes and mounted on their axis 3 symmetrically with respect to the guide 1 the formation of a gap between them 4. In the upper part of the inter-knife gap 4. located behind the fish in the direction of movement, a stationary guide element 5 is placed, having a beveled front part 6 and adjoining the back side to the guide 1.
The leading edge 7 of the guiding element 5 is made pointed and reversed towards the direction of movement of the fish.
The device at the location of the working body is equipped with a feeding conveyor 8 that is catching the fish to be processed, formed by tapes with grippers 9, which are directly behind the working body and pulled out of the side guide using tension pulleys 10. In this zone, for further transportation of fish, rotating in the plane of the circular knives 2, the conveyor 11, which is lowered from above into the space between the ribbons of the feed conveyor 8 and its hooks 12 with prismatic grooves, engages fish with sides of the back.
The upper edge 13 of the guiding element 5 should be located above the top point of the disk knife 2. The upper edge 13 of the guiding element 5 should be made with notch 14.
The device works as follows.
The carcass 15 of the fish coming from the beheading section of the fish-cutting machine enters the space between the belts of the feeding conveyor 8, which takes it in the position of swimming to the working body to open the abdominal cavity 16. While the circular knives 2 on both sides of the abdominal edge begin cutting and thereby opening the abdominal cavity 16, the front part 17 of the carcass surface reaches the guiding element 5, which penetrates the abdominal cavity 16. At the same time, the carcass 15 of the fish from the back comes into contact with the grips 12 tr As a result, due to the vertical direction of the grips profile 9, acting on the fish carcass 15, the latter descends more and more until the lower edges of the vertebrae 18 of the spine do not lie on the upper edge 13 of the guide element 5. During the further movement of the carcass 15 of the fish, the front edge 7 of the guide element 5 pushes at the end of the abdominal cavity 16 on the first 19 of the abdominal ribs 20 or on the associated 21 overlap of connective tissue flax fin 22.
The fish carcass 15 tends to move away from increasing resistance by pushing the leading edge 7 of the fixed guide element 5 to the edge of the abdomen, i.e. by raising your tail section. However, this encounters resistance from the conveyor 11 and as a result, the resistance forces increase so that the connective tissue between the abdominal rib 19 and the base 21 of the fin rays is destroyed. At the same time, the release base 21 of the fin rays manifests itself during slipping from the first abdominal rib 19 as a skid, as a result of which this abdominal rib is not cut off, as well as the subsequent ribs are bent, and the resulting certain resistance force of the ribs causes the tail part of the carcass 15 of the fish is pressed to the conveyor 11. As a result, the circular knives 2 approximately in the zone of the anal fin 22 emerge from the abdominal cavity 1.6, cut the strip of the extent of the abdomen cut by the knives, including the edge of the abdomen, anal th opening and anal fin with a base of its rays in the last zone. This abdominal wall band is removed from the device along the side anterior part 6 of the guide element 5. Now further processing becomes possible, in particular the removal of lamellar scales 23 from the sides of the carcass of fish.
The proposed device allows to obtain a high quality product and eliminate the loss of fish meat on the abdominal cavity in the area of the anus.
